Outdooroven recipe: Cheesecake
Celebrate your holiday season with this Saint Nicholas-style cheesecake. A combination of a classic cheesecake, speculaas and spiced nuts. Just what you need in the cold month of December.
Ingredients for 1 cheesecake
- 300 grams of biscuits
- 100 grams unsalted butter
- 200 grams of white chocolate
- 4 eggs
- 2 tsp vanilla extract B
- Bag of chocolate chips
- 600 grams of Philadelphia
- 200 grams of sugar
- 200 grams of crème fraîche
- Bag of caramel fudge
Supplies
- Springform
- Mixer with batter hooks
- Spatula
- Baking paper
Step 1: Light fire in the Outdooroven and let the oven get hot. Crumble ⅔ of the speculoos and melt butter on the Outdooroven. Line the springform pan with baking paper. Add the speculoos crumbs to the melted butter. Stir it in and spread the mixture over the lined bottom of the springform pan. Meanwhile, refrigerate.
Step 2: Using a mixer, beat the cream cheese, crème fraîche and sugar until smooth and creamy. Add an egg in turn. The egg should be incorporated when you add the next one. Break the white chocolate into pieces and melt it au bain-marie on the Outdooroven.
Step 3: Add vanilla extract and about 2 handfuls of spiced nuts (cut in half) to the filling. Alternatively, use sprinkles from the supermarket. When the white chocolate is completely melted, add it to the filling and stir well. Pour the filling onto the speculoos base. Cut caramel fudge into small pieces and sprinkle on top.
Step 4: Bake the cake in the oven compartment until the edges feel firm. Then let the cheesecake cook with the oven door open until the center feels firmer as well.
Step 5: Place the cake in the refrigerator or covered in cold outside air to allow the inside to solidify. The inside of the cheesecake will set in a bit. Meanwhile, thinly slice caramel fudge and crumble the remaining speculoos.
Step 6: When the cheesecake feels firm remove the cake from the springform pan. Decorate it with the speculaas crumbs, chocolate spiced nuts and sliced caramel fudge. The result: a tasty and festive whole.
