Outdooroven recipe: Coconut plum cake
- 2 eggs
- 160 ml extra virgin olive oil
- 280g greek yogurt
- 1 tbsp grated lemon zest
- 220g sugar
- 80g coconut flakes
- 1tl baking powder
- 260g self rising flour
- 6 plums

- Light the Outdooroven.
- Mix the eggs, oil, yogurt, sugar and lemon zest. Then add the coconut flakes, baking powder and self-rising baking flour to this and mix well.
- Pour the mixture into a baking dish and top with sliced plums and a little extra sugar.
- Place the cake in the Outdooroven and bake until the dough is done.
