Outdooroven recipe: Coconut plum cake

Everyone gets happy with a piece of cake. With plum season in full swing, now is the perfect time to make this coconut plum cake. For a picnic, a party or just at home. An easy recipe that will make everyone happy.

While for baking pizza in the Outdoor oven it is important to keep the heat as high as possible to get the temperature in the oven up to 400 degrees, for this pie it is important to keep the fire from burning too high. During the time the cake is baking in the oven, keep the fire low to medium-high so that the oven consistently maintains the same temperature and the cake bakes gradually. Be careful not to let the fire get too high to prevent the bottom from burning.

Ingredients: 
  • 2 eggs 
  • 160 ml extra virgin olive oil 
  • 280g greek yogurt 
  • 1 tbsp grated lemon zest
  • 220g sugar 
  • 80g coconut flakes 
  •  1tl baking powder 
  • 260g self rising flour 
  • 6 plums
Method: 
  1. Light the Outdooroven. 
  2. Mix the eggs, oil, yogurt, sugar and lemon zest. Then add the coconut flakes, baking powder and self-rising baking flour to this and mix well. 
  3. Pour the mixture into a baking dish and top with sliced plums and a little extra sugar. 
  4.  Place the cake in the Outdooroven and bake until the dough is done.
